However, you can also use other types of freshwater fish, such as catfish, pike, or perch.

How to Make Hungarian Fish Soup

Making Hungarian fish soup is not difficult, but it does require some preparation. You will need to clean, gut, and fillet the fresh carp, and cut the fillets into slices. You will also need to salt the fish slices and the offal (the organs and entrails of the fish) together. Then you will need to boil stock from the fish bones and heads with red onion, salt, and water. You will strain the stock and return it to the pot. Next, you will sprinkle paprika on top of the fat and add the salted fish, diced peppers, and tomatoes. You will season the soup with salt and cook it at a slow boil until the fish is done. Finally, you will make an extract from the cherry pepper with a little juice and serve it separately.

<p dir="ltr" style="line-height: 1.38; text-align: justify;
If you are a fan of pork and goulash, you might want to visit some of the Central European countries that share a common culinary heritage. Hungary, Serbia, Slovakia, and Romania are among the countries that have a lot in common when it comes to their cuisine, especially their use of pork and their famous stew called goulash.

What is Goulash?

Goulash is a hearty stew that originated in the medieval times as a dish for Hungarian shepherds. The name comes from the Hungarian word “gulyás”, which means “herdsman”. The dish consists of meat (usually pork, but sometimes beef or lamb), paprika, onions, garlic, tomatoes, potatoes, carrots, and other spices and vegetables. The dish is cooked slowly over low heat until the meat is tender and the sauce is thick and flavorful.

Goulash is often considered a national dish in Hungary, Serbia, Slovakia, and Romania, and each country has its own variations and traditions. For example, in Hungary, goulash is usually served with bread or noodles, while in Serbia, it is often accompanied by sour cream or cheese. In Slovakia, goulash is sometimes made with sauerkraut or mushrooms, while in Romania, it is sometimes flavored with wine or vinegar.

Why Pork?

Pork is another common ingredient in the cuisine of these Central European countries. Pork is a versatile meat that can be prepared in many ways, such as roasted, grilled, smoked, fried, or boiled. Pork is also used to make various types of sausages, such as kielbasa in Poland, kolbász in Hungary, kobasica in Serbia, klobása in Slovakia, and cârnați in Romania.

Pork is popular in these countries for several reasons. One reason is that pork is relatively cheap and widely available compared to other meats. Another reason is that pork has a long history and tradition in these countries. For example, in Hungary, pork was introduced by the Magyars who migrated from Asia in the 9th century. In Serbia, pork was a symbol of resistance against the Ottoman Empire who forbade it. In Slovakia and Romania, pork was a staple food for peasants who raised pigs on their farms.

Conclusion

Pork and goulash are two examples of how the cuisine of Central European countries reflects their history, culture, and geography. These dishes are not only delicious and satisfying but also tell a story of how these countries have influenced and been influenced by each other over the centuries. If you want to taste some of the best pork and goulash in the world, you should definitely visit Hungary, Serbia, Slovakia, and Romania.

If you love grilling, you might want to take some inspiration from Central European countries, such as Serbia and Romania, where grilling is a popular and delicious way of cooking meat. Grilling is a method of cooking food over direct heat, usually from charcoal or wood. Grilling gives food a smoky flavor and a charred crust, while keeping it juicy and tender inside.

What to Grill

One of the most famous grilled dishes in Central Europe is cevapi, which are small sausages made from minced beef or lamb, mixed with garlic, salt, and spices. Cevapi are usually served with flatbread, chopped onions, sour cream, and ajvar, a relish made from roasted red peppers and eggplant. Cevapi are popular in Serbia, Bosnia and Herzegovina, Croatia, and Montenegro.

Another popular grilled dish in Central Europe is mici, which are similar to cevapi but made from a mixture of beef, pork, and lamb. Mici are seasoned with garlic, paprika, cumin, and herbs, and shaped into elongated meatballs. Mici are usually served with mustard, bread, and pickles. Mici are popular in Romania, Bulgaria, and Moldova.

Other grilled dishes in Central Europe include pljeskavica (a large burger patty), raznjici (skewers of meat and vegetables), sarma (stuffed cabbage rolls), and mititei (small meatballs).

How to Grill

To grill like a pro in Central Europe, you will need a charcoal grill or a wood-fired grill. You will also need some basic tools, such as tongs, spatula, skewers, and a meat thermometer. Here are some tips on how to grill:

– Start by lighting your grill and letting it heat up for about 15 minutes. You want to create hot zones and cool zones on your grill for different types of food.

– Season your meat with salt, pepper, and spices before grilling. You can also marinate your meat for extra flavor and tenderness.

– Place your meat on the hot zone of the grill and sear it for a few minutes on each side to create a crust. Then move it to the cool zone of the grill and cover it with a lid to cook it through.

– Use a meat thermometer to check the doneness of your meat. The recommended internal temperature for beef and lamb is 145°F (63°C) for medium-rare, 160°F (71°C) for medium, and 170°F (77°C) for well-done. The recommended internal temperature for pork is 145°F (63°C) for medium-rare and 160°F (71°C) for well-done.

– Let your meat rest for about 10 minutes before serving. This allows the juices to redistribute and the meat to become more tender.

– Enjoy your grilled meat with your favorite sides and sauces.

Conclusion

Grilling is a fun and easy way to enjoy Central European cuisine at home. By following these tips and trying some of the dishes mentioned above, you can impress your friends and family with your grilling skills. Happy grilling!

Romania is a country with a rich and diverse culinary heritage, influenced by its geography, history and neighboring cultures. From hearty soups and stews to sweet pastries and cakes, Romanian cuisine offers something for everyone. In this blog post, we will explore some of the regional specialties of Romanian cooking, and how they relate to vocational educational training of Erasmus Plus (VET), education and trends.

One of the most iconic dishes of Romania is sarmale (cabbage rolls), a dish of Turkish origin that has been adapted to the local taste and ingredients. Sarmale are made with minced meat (usually pork or a mix of pork and beef) and rice, seasoned with herbs and spices, and wrapped in cabbage leaves or grape leaves. The rolls are then cooked in a pot with tomato sauce, water or wine, and sometimes smoked meat for extra flavor. Sarmale are traditionally served with mamaliga (a cornmeal porridge similar to polenta) and sour cream, and are a staple dish for festive occasions, such as Christmas or weddings.

Sarmale are not only a delicious meal, but also a valuable learning opportunity for students who want to pursue a career in hospitality or tourism. Through the Erasmus Plus VET program, students can participate in mobility projects that allow them to learn from professionals in different countries and cultures. For example, a Romanian student who wants to become a chef can travel to Turkey and learn how to prepare sarmale and other local dishes from an experienced mentor. Similarly, a Turkish student who wants to work in a hotel can travel to Romania and learn about the culture and cuisine of the country from a host organization. By participating in these projects, students can develop their skills, knowledge and competences in their chosen field, as well as improve their language abilities and intercultural awareness.

Another traditional dish of Romania is ciorba de burta (tripe soup), a spicy soup made with beef tripe, beef and pork bones, vegetables and herbs. Ciorba de burta is considered to be a delicacy by many Romanians, who enjoy its strong aroma and velvety texture. The soup is usually served with sour cream, vinegar or garlic sauce, and bread. Depending on the region, ciorba de burta may have different variations. For example, in the northern region of Maramures, ciorba de burta is made with lamb tripe and sour cabbage juice, while in the southern region of Oltenia, ciorba de burta is made with chicken tripe and lemon juice.

Ciorba de burta is not only a tasty dish, but also a source of inspiration for students who want to explore the natural environment and its resources. Through the Erasmus Plus VET program, students can participate in mobility projects that allow them to learn from experts in different fields related to nature and sustainability. For example, a Romanian student who wants to become a veterinarian can travel to France and learn how to treat and care for animals from a local farm. Similarly, a French student who wants to become an environmental engineer can travel to Romania and learn how to monitor and protect the water quality from a research institute. By participating in these projects, students can acquire practical skills and knowledge that are relevant for their future careers, as well as enhance their environmental awareness and responsibility.

A third traditional dish of Romania is cozonac (sweet bread), a festive loaf that is usually baked for Easter or Christmas. Cozonac is a yeast bread that is enriched with eggs, butter, sugar and milk, and flavored with orange and lemon zest. The dough is rolled out and spread with a filling of walnuts, almonds, cocoa, raisins, poppy seeds or Turkish delight. The filled dough is then braided and baked until golden and fluffy. Cozonac is often sliced and served with a cup of tea or coffee, or dipped in warm milk.

Cozonac is not only a delicious treat, but also a cultural expression of the Romanian traditions and values. Through the Erasmus Plus VET program, students can participate in mobility projects that allow them to learn from artisans and craftsmen in different countries and cultures. For example, a Romanian student who wants to become a baker can travel to Italy and learn how to make cozonac and other sweet breads from a local bakery. Similarly, an Italian student who wants to become a potter can travel to Romania and learn how to make clay pots and dishes from a local workshop. By participating in these projects, students can gain artistic skills and knowledge that are useful for their future careers, as well as appreciate the diversity and beauty of the European heritage.

A fourth traditional dish of Romania is papanasi (cheese donuts), a dessert that consists of fried cheese dough balls topped with sour cream and jam. Papanasi are usually made with cottage cheese or ricotta cheese, mixed with eggs, flour, sugar and a dash of rum. The dough is shaped into balls with a smaller ball on top, resembling a mushroom. The balls are then deep-fried until golden and crispy on the outside and soft and cheesy on the inside. Papanasi are served hot with generous amounts of sour cream and blueberry jam or sauce.

Papanasi are not only a mouth-watering dessert, but also a fun and creative way to enjoy cheese. Through the Erasmus Plus VET program, students can participate in mobility projects that allow them to learn from farmers and producers in different countries and cultures. For example, a Romanian student who wants to become a cheesemaker can travel to France and learn how to make papanasi and other cheese products from a local dairy farm. Similarly, a French student who wants to become a beekeeper can travel to Romania and learn how to make jam and honey from a local apiary. By participating in these projects, students can discover new ways to use natural ingredients and produce quality food products that are healthy and tasty.

Here are some of the most common and interesting spices used in Central European cuisine.

Paprika

Paprika is a quintessential ingredient in Hungarian cuisine, and it is also widely used in Serbia, Slovakia, and Romania. Paprika is made from ground Capsicum peppers, which can range from sweet to hot in flavor. The process of making paprika was developed in the 16th century by the Turks, who then introduced it to Hungary.

Paprika is used to season meat, soups, sauces, and vegetables. It is also the main ingredient in goulash, a famous stew made with paprika, meat, and vegetables. Paprika gives dishes a vibrant red color and a smoky, peppery taste.

Cumin

Cumin is another spice that was brought to Central Europe by the Turks. Cumin is a seed that has a warm, earthy flavor and a strong aroma. Cumin is especially popular in Serbian and Romanian cuisines, where it is used to flavor meat dishes, cheese, breads, and salads.

Cumin is also believed to have health benefits, such as aiding digestion, boosting immunity, and fighting infections. Cumin can be used whole or ground, and it can be toasted to enhance its flavor.

Coriander

Coriander is a spice that comes from the seeds of the cilantro plant. Coriander has a citrusy flavor and a floral scent. Coriander is used in Slovakian and Hungarian cuisines for its fresh and tangy taste. Coriander is often used in pickling vegetables, such as cucumbers, cabbage, and peppers.

Coriander is also used to flavor soups, salads, sauces, and desserts. Coriander can be used whole or ground, and it can be combined with other spices to create spice blends.

Conclusion

Central European cuisine is not only hearty and satisfying but also spicy and flavorful. By using spices such as paprika, cumin, and coriander, Central European countries add diversity and complexity to their dishes. If you want to spice up your meals with some Central European flair, you should definitely try some of these spices.

Hungary is a country with a rich and diverse culinary heritage, influenced by its geography, history and neighboring cultures. From hearty stews and soups to sweet pastries and cakes, Hungarian cuisine offers something for everyone. In this blog post, we will explore some of the regional specialties of Hungarian cooking, and how they relate to vocational educational training of Erasmus Plus (VET), education and trends.

One of the most iconic dishes of Hungary is goulash (gulyás), a thick and spicy stew made with beef, paprika, onions, potatoes and other vegetables. Goulash originated as a dish of the nomadic Magyar shepherds, who cooked it in iron kettles over open fires. Today, goulash is a national symbol of Hungary, and can be found in different variations across the country. For example, in the northern region of Eger, goulash is made with red wine and smoked bacon, while in the southern region of Szeged, goulash is enriched with sour cream and served with bread dumplings. Goulash is also a popular dish in other Central European countries, such as Slovakia, Romania and Austria.

Goulash is not only a delicious meal, but also a valuable learning opportunity for students who want to pursue a career in hospitality or tourism. Through the Erasmus Plus VET program, students can participate in mobility projects that allow them to learn from professionals in different countries and cultures. For example, a Hungarian student who wants to become a chef can travel to Austria and learn how to prepare goulash and other local dishes from an experienced mentor. Similarly, an Austrian student who wants to work in a hotel can travel to Hungary and learn about the culture and cuisine of the country from a host organization. By participating in these projects, students can develop their skills, knowledge and competences in their chosen field, as well as improve their language abilities and intercultural awareness.

Another traditional dish of Hungary is fisherman’s soup (halászlé), a spicy soup made with freshwater fish, such as carp, catfish or perch. Fisherman’s soup is typically cooked in a large pot over an open fire by the banks of a river or lake. The soup is seasoned with paprika, onion, garlic and other herbs and spices. Depending on the region, fisherman’s soup may be served with bread, pasta or rice. For example, in the northern region of Borsod-Abaúj-Zemplén, fisherman’s soup is served with thin noodles called csipetke, while in the southern region of Bács-Kiskun, fisherman’s soup is served with thick noodles called tarhonya.

Fisherman’s soup is not only a tasty dish, but also a source of inspiration for students who want to explore the natural environment and its resources. Through the Erasmus Plus VET program, students can participate in mobility projects that allow them to learn from experts in different fields related to nature and sustainability. For example, a Hungarian student who wants to become a fisherman can travel to Finland and learn how to catch and process fish from a local fishery. Similarly, a Finnish student who wants to become an environmental engineer can travel to Hungary and learn how to monitor and protect the water quality from a research institute. By participating in these projects, students can acquire practical skills and knowledge that are relevant for their future careers, as well as enhance their environmental awareness and responsibility.
