Overview of Hungarian Cuisine and its cultural significance

Hello and welcome to the CookEU training!

This training is designed to help you learn how to cook delicious and healthy dishes from
different European cuisines. You will discover the history, culture and ingredients of
various regions, and practice your skills in preparing and presenting mouth-watering
recipes.

In this module, you will learn about the cuisine of Hungary, one of the most revered and
influential cuisines in Europe. You will explore its history, culture, ingredients, dishes, and
cooking techniques. You will also discover how Hungarian cuisine reflects the identity and
values of the Hungarian people.

History and culture of Hungarian cuisine
Hungarian cuisine has a long and rich history that dates back to the ancient Magyars, the
nomadic ancestors of the Hungarians who settled in the Carpathian Basin in the 9th
century. The Magyars brought with them their pastoral customs and their preference for meat,
dairy products, and cereals. They also adopted some of the cooking methods and ingredients of
the various peoples they encountered, such as the Turks, Germans, Slavs, and Romans.
Hungarian cuisine was further influenced by the cuisines of neighboring countries,
especially Austria and Turkey, during the centuries of foreign domination. The Austro-
Hungarian Empire (1867-1918) introduced many dishes from Vienna, such as schnitzel, strudel,
and gugelhupf. The Ottoman occupation (1541-1699) introduced many spices, such as paprika,

baklava.

Hungarian cuisine is also a reflection of the cultural diversity and regional variations within
Hungary. There are many regional specialties and variations in ingredients and preparation
methods. For example, the cuisine of Transylvania (now part of Romania) is influenced by
Romanian and German cuisines and features dishes like kürtőskalács (chimney cake), töltött
káposzta (stuffed cabbage), and palócleves (lamb soup). The cuisine of Szeged (a city in
southern Hungary) is famous for its fish soup, paprika production, and salami making.

The cuisine of Budapest (the capital city) is cosmopolitan and sophisticated, incorporating
influences from French, Italian, Jewish, and other cuisines.

soup).
